I was actually surprised to find a ‘new’ stall at Tanglin Halt Market & Food Centre – which is poignantly counting down to its final days in 2024.

Aw’s Signature Minced Meat Noodles, while not an entirely new establishment, has moved to this hawker centre.

First making its mark at Commonwealth Drive Food Centre, I remember trying it when it was within The Milky Way café.

It now stands proud as a hawker stall (again), located right next to the immensely popular Wei Yi Laksa & Prawn Noodle 唯一辣沙.

At first glance, the menu offers what seems to be a standard fare for noodle enthusiasts.

But I need to say its version of Minced Pork Noodles aka Bak Chor Mee is quite unlike any others I ever tried before.

So if you come expect the ubiquitous vinegary base paired with minced pork and braised mushrooms, you might find yourselves momentarily taken aback.

The hawker stall sells Signature Noodles ($5.50), Minced Pork Noodles ($3.50), Handmade Fishball Noodles ($3.50), Fish Maw Bee Hoon ($5) and Braised Pork & Curry Chicken Rice ($5.50).

The Signature Noodles ($5.50) presents a symphony of sliced button mushrooms and fried dumpling layered over slight-chewy mee kia noodles.

Over on the soup side, you would find a prawn, meatball, fishball, herh keow (fish dumpling), and the surprising slice of mock abalone.

That was quite a lot of ingredients for its price.

Instead of the usual vinegary blend, you would find a house-made sauce – said to include fish sauce and kecap manis for a a unique depth of flavour.

Though I can imagine some people being ‘unused’ to this.

What I liked was the spicy chili, infused with just the right amount of kick.

While the Signature Noodles certainly left a different impression, it was the Braised Pork Noodles ($5) that I preferred better.

Featuring generous chunks of fatty-lean pork belly bathed in a sumptuously rich and aromatic braised sauce, complemented by quail eggs and tau pok, it was a heartwarming bowl that may evoke nostalgia.

The braised pork is a cherished recipe passed down from the hawker’s mother and revised through self-taught culinary skills.
