Located on the 25th level of Andaz Singapore, Alley on 25 is all about “dining in the sky”.

Housing different restaurants in one place, the space boosts stunning citywide views through floor-to-ceiling windows.

The all-day-dining restaurant is ready to entice patrons further with the cheerful introduction of a Strawberry-themed Alley Tea-scape experience.

This is available every day from 3pm to 5pm, at $42++ per person (Online Reservation Here)

The exclusive Tea-scape menu is curated by Alley on 25 Chef de Cuisine Tommy Wong and newly-appointed hotel Pastry Chef Francis Wong.

If you find Chef Francis’ name familiar, you may have come across his desserts at the defunct Non Entrée Dessert Café and other places.

He is known for his quirky and instagrammable desserts (remember the sweet “Bak Chor Mee”?), pastries, and artisanal gelato. His creativity can be found in the sweets of the Alley Tea-scape menu.

Prepared using fresh strawberries imported specially from Australia, the dainty sweet and savoury treats in various sizes and shapes adorn colourful handcrafted stands.

This presentation is a nod toward the iconic architectural style of the shophouse enclave, situated a stone’s throw away from the hotel.

Highlights of the Alley on 25 Strawberry-themed Alley Tea-scape include:

Hokkaido Milk Panna Cotta with Strawberry Cloud
This is one my my personal favourites of the Afternoon Tea set. The Hokkaido milk used in Panna Cotta gave it that rich and creamy texture, along with silky-smooth consistency.

Adding a wow factor to this sweet delight is the “Strawberry Cloud” on top, complete with edible flowers.

The ‘cloud’ boasted a marshmallow-like texture while balancing the flavour profile of the panna cotta with its tart-fruitiness.

Strawberry Shortcake
This is another surprise, as it did not look like the typical ‘shortcake’.

Slice the cake apart, and find those delightful layers of velvety vanilla Chantilly cream and buttery shortbread at the base.

You also get that contrasting play of textures and flavours between the cream and shortbread. Soft on the tongue and light on the tummy.

Strawberry Lollypop
This looks fun and ‘simple’, but then again, the surprise is truly on the inside.

Chef Francis adds Sakura extract from Japan to its construction, giving the adorably reddish-pink lollipops a delicate floral flavour.

Strawberry Yuzu Éclair
Inspired by Japanese ingredients, the classic éclair is given a twist. Expect homemade choux pastry, yuzu cream filling, and a sweet aromatic topping of hulled strawberries.

The choux pastry is particularly noteworthy for its airy quality and crispy exterior.

At the same time, in tune with the theme, the Australian strawberries elevate the éclair’s palatability with its fruity sweetness.

Pistachio Scones
Any teatime by all measures, must include scones.

Here, you would find them freshly baked and served warm, melt-in-your-mouth buttery on the inside but with a mouth-wateringly flaky exterior.

Giving the scones that extra boost of sweet and nutty taste is strawberry crisps and freshly ground pistachio nuts.

Also loved the specially-made milk jam and clotted cream.

Brie Sandwich
Balancing the sweet quotient of the Tea-scape is a selection of savouries made with premium ingredients.

The Brie Sandwich makes the most of the cheese’s creamy decadence, juxtaposing it with the sharpness of sliced granny smith apples.

There is also hot honey mustard that delivers a swell of piquancy to every bite.

Gravlax Bagel
For you to relish the pleasures of Scandinavian open sandwiches, Alley on 25 includes a dainty Gravlax Bagel in its tea arrangement.

This fluffy mini bagel comes with a spread of herbed cream cheese and gravlax topping of cured salmon.

Creamy Chicken Vol-Au-Vent
This Creamy Chicken Vol-Au-Vent combines various cooking techniques to extract maximum taste from the chicken.

First, the chef char-grills the poultry with rosemary and thyme to let the herby flavours seep into the juicy meat.

Then, the chicken is sous-vide and mixed with bacon, cream cheese, and bell peppers.

Eventually, the filling finds its way into crispy puff pastries that work in tandem with the creaminess of the chicken.

The epicurean treat comprises free-flow freshly brewed coffee and a selection of TWG Tea, including Singapore Breakfast, Moroccan Mint, and Vanilla Bourbon.

To enhance the relaxing afternoon, guests can add other beverage choices by the glass available from $20.

This includes red and white wines, Andaz Pilsner, Delamotte Brut Champagne, Billecart-Salmon Brut Rosé, and low-ABV Copenhagen Sparkling Tea.
