The festive culinary feast to greet the Year of the Rabbit will include a newly-launched one-of-a-kind Signature La Zi Ji (“Chong Qing” Diced Chicken with Dried Chilli), Abalone, and Smoked Salmon Yu Sheng.

Seeing a growing preference towards vegetarianism, Si Chuan Dou Hua Restaurant at PARKROYAL on Beach Road has also launched an entirely vegetarian menu (from $98++ per pax) at the same time.

Additionally, you can indulge in an array of celebratory savoury and sweet treats, perfect for sharing with friends and family this festive period. Here are the Si Chuan Dou Hua Restaurant at PARKROYAL on Beach Road CNY highlights:

Abundance Treasures Yu Sheng (available as part of CNY dine-in set menu and takeaway; $118 for 4-6 persons and $138 for 8-10 persons for takeaway)
The Abundance Treasures Yu Sheng is a hearty and share-worthy preparation of La Zi Ji, Abalone, and Smoked Salmon Yu Sheng.

It amalgamates diverse yet familiar flavours on a plate of culinary goodness.

If you are a regular to Si Chuan Dou Hua Restaurant at PARKROYAL on Beach Road, you would know that its La Zi Ji has been a perpetual favourite and best-seller.

The dish consists of juicy chicken pieces, adequately marinated and deep-fried to an alluring crispy exterior. The boneless chicken is then wok-fried with dried chillies and Sichuan peppercorns.

Now, the chicken pieces can be added to the Abundance Treasures Yu Sheng, adding crunch and fragrant meaty delight to the colourful medley of fresh vegetables and sauces.

There are also other choices of Rabbit-style Fugu Japanese Pufferfish Yu Sheng (with ice plant, edible flowers and fresh greens), and Double Prosperity Yu Sheng added with crispy fish skin for you to toss to prosperity.

Treasure Pot Pen Cai (available as part of CNY dine-in set menu and takeaway; $288 for 3-4 persons and $488 for 6-8 persons for takeaway)
This luscious fortune pot comes brimming with indulgent quality delicacies, with the full works of abalone, fish maw, sea cucumber, prawns, dried scallop, dried oyster, wax meat, duck, pork, chestnut, cabbage, mushroom, yam, and black moss.

Cooked in your choice of Traditional Abalone broth, Collagen, or Sichuan Mala for a steer from the conventional.

The Traditional Abalone Broth has just the right consistency, thick but not exceedingly soupy.

Moreover, besides its nourishment value, the broth has a classic abalone sweet and savoury taste, complementing the various luxurious ingredients.

If you would like something to add that kick, get the Sichuan Mala base prepared using a secret recipe of dried chilli, peppercorns and more. A must-have for Mala lovers.

King Garoupa with Fresh Sichuan Peppercorn (available as part of CNY dine-in set menu)
This dish is exclusive to Si Chuan Dou Hua Restaurant at PARKROYAL on Beach Road as it is a Chef’s specialty.

You would find the slices of King Garoupa having a fresh-tasting mild taste, flaky texture, and collagen-rich skin.

Cooking it with spring onions makes the fish’s natural sweetness more prominent.

What is interesting is that the dish has a uniquely complex combination of balancing spring onions and the heat from the Sichuan peppercorn.

While there are Sichuan peppercorn, the spiciness is on the mellow side. Although every bite promises a bold aftertaste, the heat does not linger in the mouth, making every spoonful equally enticing.

Braised Lobster with Fish Paste Noodles in Superior Stock (available as part of CNY dine-in set menu)
You might not want to skip over the Braised Lobster, considering it is an outlet-exclusive dish.

The lobster medallion, true to its character, is traditionally sweet to the palate. Simultaneously, the flesh is tender and made even more luscious by dressing it in a full-bodied stock.

The accompanying fish paste noodles which are prepared in store, keep the theme of the dish firmly oceanic.

Made from a mixture of ground fish and flour, the noodles have a subtle fish aroma and a slightly chewy yet soft texture which is quite different from the usual noodles.

Double-boiled Chicken Broth with Sea Cucumber, Matsutake Mushroom, and Dried Scallop (available as part of CNY dine-in set menu)
A labour of love that takes so many hours to make, nourish your tummy with this better-for-you chicken soup added with matsutake mushrooms – prized for their delicate-earthy flavour.

This double-boiling allows the flavours of the ingredients to be gently extracted and infused into the broth, resulting in a flavour-rich soup.

Braised Bird’s Nest with Fresh Fish Maw in Crab Meat Sauce (available as part of CNY dine-in set menu)
Shifting from the typical soupy presentation, the braised Bird’s Nest goes all creamy with a luxuriantly delightful crab meat sauce forming the base of the dish.

The sauce deserves a special mention for its focused palatability, wherein the seasoning and shredded crab meat results in a robustly taste with seafood sweetness.

The queen of the nest, though, is the fresh fish maw.

The highly nutritional dried fish air bladder has a spongy disposition that gives the meat a bounce while allowing it to soak in the flavours of the sauce.

Although fine-dining in its look, the Braised Bird’s Nest is a comforting recipe you would likely remember for a long time.

Braised 8-Head Abalone with Hangzhou-style Pork Belly and Seasonal Vegetables (available as part of CNY dine-in set menu)
A minimalistic, eye-catching presentation sets the mood for a dish that celebrates the distinct individuality of its three diverse main ingredients.

The trio of sea and land produce, delicately showcased, comprises traditional Hangzhou-style pork belly, chewy abalone, and a mix of fresh seasonal vegetables cooked in a tasty sauce.

Prepared using the age-old slow-cooking technique, the pork belly, due to its rendered fat, adds a moist and tender element to the dish.

At the same time, the soft-chewy abalone contrasts the meat; along with vegetables that helps balance the richness of the other components.

Bunny-shaped Milk Pudding (available as part of CNY dine-in set menu)
The word cute doesn’t do justice to the Bunny-shaped Milk Pudding that is definitely Instagram-worthy while being a silky sweet, pure, and propitious welcome to the Year of the Rabbit.

Pan-Fried Auspicious Nian Gao (available as part of CNY dine-in set menu and takeaway)
The Nian Gao juxtaposes the milk pudding in colour, taste, and texture.

Made using glutinous rice flour and brown sugar, the traditional Chinese New Year cake is sweet and somewhat gooey.

The exterior stickiness, particularly, is due to a light egg batter coating and resulting caramelization as the cake piece is gently pan-fried before serving.
