Shang Social 香聚 at Jewel Changi Airport is ready to delight diners with the introduction of a freshly curated menu.

The menu, in part thoughtfully planned by top Shangri-La Chinese master chefs, continues to celebrate the diversity of the region’s culinary landscape.

You can expect everything from iconic roasted Peking Duck, House Smoked Chicken, dim sum, to signature bamboo noodles.

The modern Chinese restaurant creates an ambience that equally appeals to fine dining and casual diners.

If you have not been here before, Shang Social’s expansive open-plan setting is a free-flowing mix of three sections.

The sit-down area exudes a classy aura and makes for a great place to enjoy a relaxed multi-course meal.

At the same time, the urban communal seating and the bar are laid-back spaces ideal for lighter dishes, dim sum or a beverage with friends or colleagues.

That one gets to view the HSBC Rain Vortex while dining at the restaurant is the cherry on top of what is bound to be a gastronomic affair.

Executive Chef Loh Chen Hin is at the helm, bringing to the table a lifelong zeal for Chinese cuisine and over 25 years of experience.

As such, diners at Shang Social have the opportunity to savour a variety of traditional and contemporary preparations that have origins in Cantonese, Sichuan, and Huaiyang cuisines.

House Smoked Chicken 茗茶醺鸡 ($48 for whole, $28 for half)
The traditional preparation of a Cantonese classic like Soy Sauce Chicken receives a flavour boost when smoked over cinnamon, jasmine tea leaves, and yellow rock sugar.

On the one hand, the meat was tender to the bone and moist thanks to its luscious juices – which is why the dish remains a favourite in the first place.

However, the cooking process induced a hint of sweetness from the rock sugar and delicate smoky aftertaste which was pretty special.

The highlight of the Smoked Chicken is the appealing aroma that enticed the nose, before the meat would delight the tastebuds.

Stewed Red Garoupa Fillet in Pea Mash Soup with Pickled Pepper and Chinese Cabbage 椒香豆汤酸菜鱼 ($98)
The culinary team kept local preferences in mind during the R&D of this dish.

Miles away from the fiery spiciness one might expect from a Sichuan dish, Shang Social’s Stewed Red Garoupa Fillet in Pea Mash Soup is a hearty preparation with a milder take.

Arriving in a large clay pot, the boneless red garoupa was sliced thick, tasted fresh with slightly sweet taste.

To moderate the mildness of the fish, the chef paired it with a thick and robust mashed pea broth seasoned with limited amounts of Sichuan peppercorns, pickled mustard greens, and pickled pepper.

The broth was very tasty, with a balance between sour and sharp flavours every spoonful.

Promotion: Enjoy a Double Delight Set at $98++ (good for 2 pax) that features the Stewed Red Garoupa Fillet in Pea Mash Soup with Pickled and Chinese Cabbage.

Wok-Fried Fish Maw with Scallion and Sweet Pea 京葱蜜豆爆花胶 ($68)
The otherwise mild fish maw enjoys a high flavour profile thanks to the chefs wok-frying it with a special sauce.

In terms of texture, the fish maw had a slight spongy texture and chewy consistency, which worked well with the scallion and sweet pea.

Barbecued Honey Pork belly 蜜汁叉烧 ($18.80)
Shang Social’s repertoire of roasts is a collaborative effort between Chinese Executive Chef Loh and Roast Chef Chow Wing Cheung.

These roasts boast the tempting chars and succulent texture achieved by preparing them using traditional techniques.

The belly pieces came with a lovely sheen on the crispy skin, while the marinade elevated the sweet and smoky quotient.

Give it a pop in your mouth, and savour that juiciness that makes every bite absolutely delicious. This was so good, I would order it again, or have the Char Siew with Bamboo Noodles.

Roasted Peking Duck 北京片皮鸭 ($78 for whole, $42 for half)
Expect thin slices of Roast Peking Duck with beautiful crunchy skin and moist meat that one can season further with a deeply-rich sweet and salty Hoisin Sauce.

To enjoy the duck, wrap it inside equally thin Pancakes (20 pieces) along with Spring Onion and Cucumber for a nice crunch in every nibble.

For the second way of eating (additional $10), you can have the duck meat fried in Kung Pao, Mala, Salt and Pepper, or Bean Sprouts and Preserved Vegetable.

Steamed Trio Seafood Dumpling 香聚三色饺 ($9.80)
Dim Sum choices are a plenty here, with options such as Kurobuta Xiao Long Bao ($8.80), Steamed Spinach Dumpling with Century Egg and Golden Garlic ($7.80), Crispy Vermicelli Roll with King Scallop ($9.80), to Suzhou Baked Minced Pork Bun ($7.80).

The Steamed Trio Seafood Dumpling is a selection of three “Siu Mai” in an open-top boat-like shape.

Elevating the dish further are individual toppings of abalone, smoked salmon, and scallop, giving each dumpling a particularly sweet, buttery, or smoky character.

Pan-fried Shanghai Pork Bun 生煎包 ($10)
To cook, the chef first pan-fries the pork buns in a special way, resulting in a crunchy lower half.

He then steams it to the point that the meat inside is still juicy and retains its natural flavour.

The final product is an assortment of textures and tastes. From the crispy bottom to the spongy top half of the bun, and the moist, almost soupy pork inside.

Eight Treasures Tofu Pudding 八面玲珑豆腐花 ($30)
Shang Social’s Eight Treasures Tofu Pudding is not quite the same as the usual – consisting of a delightfully velvety tofu custard enclosed in a traditional wooden bucket.

Accompanying this bean curd are eight savoury condiments in separate bowls, ranging from dried Sakura ebi and peanuts to pickled vegetables, spring onions, and spicy stir-fried minced meat.

You can mix and match the toppings as per your liking.

However, a sprinkle of a ninth condiment, the house-made soy sauce, is partly essential as it helps balance all the diverse flavours with its moderately sweet-meets-salty temperament.
