Crispy Sweet and Sour Pork ($16.30)
A comforting preparation, the Crispy Sweet and Sour Pork ticks all the necessary boxes it promises in its name.

The dish comprises pork pieces, lightly coated in batter and deep-fried till they are crispy and tender.

The pork is then stir-fried with shards of carrots, red and green bell peppers, onions, and sliced pineapples.

Then these are doused generously in a bright red sweet and sour sauce to showcase the perfect balance between sugar and rice vinegar.

I found the meat just right, juicy on the inside, with a satisfying crunch outside – one of the best you can find in Singapore.

Braised Big Prawn Hor Fun with Prawn Broth ($13.90 for regular, $20.90 for large)
Some of the comforting “prawn signature mains” at Paradise Classic include the Braised Big Prawn Hor Fun with Prawn Broth, Stewed Big Prawn Bee Hoon with Prawn Broth, and Prawn-infused Ebiko Prawn Fried Rice.

You would find that the house-made prawn broth would give that umami-ness.

Prepared with fresh prawns and spices, the secret behind the broth’s dynamic taste lies in the cooking process which lasts over six hours in order to extract every ounce of the ingredients’ inherent flavours.

The Braised Big Prawn Hor Fun with Prawn Broth is a favourite primarily because of the complexity it adds through different components.

At the heart of the dish is the full-bodied moorish broth, accompanied with luscious and sweet prawns and smooth hor fun rice noodles.

Not forgetting the alluring smokiness of wok hei to the dish.

Finally, the silky egg, I believe, was a simple yet essential element that balanced the richer components while giving the broth a creamier disposition.

Braised Silver Needle Noodles with Prawn and Salted Fish in Claypot ($13.90 for regular, $20.90 for large)
Mee Tai Mak, also known as Silver Needle Noodles, are so called because their shape resembles small pins.

When was the last time you had it?

They are a bit fluffier and more absorbent, which means they mix well with various ingredients that have slightly stronger palatability.

This particular claypot dish is a prime example, where one can taste the oceanic flavours in every bite.

Upon serving, a special sauce would be poured over – included with a combination of salted fish sauce and lime juice.

The salted fish, in particular, is first steamed and then drenched in hot oil. This technique results in a beautiful aroma.

Added with lime juice, you also get citrus undertones and oodles of tanginess in the dish.

Double Boiled Kampong Chicken Soup ($25.90, serves 2-4 pax)
The flavourful and nourishing intense taste of the Double Boiled Kampong Chicken Soup is a result of patience and simple cooking.

As nutritiously nourishing as chicken soup is supposed to be, the dish comes piping hot and remains as such till you scoop out the last serving.

Moreover, the first sip is enough to highlight the robustness of the soup, which is a direct result of slow-boiling it twice for an extended period.

The process also makes the chicken chunks juicy and tender.

Hot Plate Tofu with Preserved “Cai Xin” and Minced Pork ($15.90)
The Hot Plate Tofu is a must-try for all diners who love homemade tofu.

The dish has plenty of appetizing textures, starting with the deep-fried tofu having a crunchy exterior and soft interior.

Contrasting the crispiness is the gooeyness of the slightly salty minced pork sauce.

However, the stand-out element of the recipe, for me, was the preserved “cai xin”.

Also known as choy sum or Chinese flowering cabbage, the wok-fried leafy vegetable is added to the sauce before it is poured all over the block of tofu.

The final bit of drama to the preparation comes from it being served on a sizzling hotplate with an egg.

Crisp-fried Shrimp Paste Chicken ($16.30)
These mid-joint wings are marinated in fermented shrimp paste, which provides a subtle aroma that is not overpowering, and then deep-fried to perfection.

While the wings could have been a bit plumper, the meat inside was juicy and packed with flavour.
