Town Restaurant at The Fullerton Hotel Singapore celebrates aquatic flavours through a dynamic all-you-can-eat buffet dinner “Seafood Symphony”.

New Zealand King Salmon and Yellowfin Tuna
With plenty of live gastronomic action all around, some drama and theatrics can perk up the dining experience.

Guests can thus witness demonstrations wherein an entire New Zealand King Salmon and Yellowfin Tuna, weighing up to 30 kgs each, are sliced professionally with much pomp and show.

Outdoor Charcoal Grill
During the buffet, diners can relish a host of smoky and aromatic preparations at Seafood Symphony’s outdoor grill (located just outside the restaurant).

One of which is the Creole Butter Bamboo Lobster, a sweet, juicy, earthy, and unmissable favourite.

Other highlights from the grill include the Yakiniku Tare Fresh King Prawn, Ras el Hanout Spices King Salmon Fillet, and Chermoula Spices Half Shell Scallop.

Chef’s Special – Lobster, Alaskan Crab, Asian Spices en Papillote <(one-time serving on weekly rotation)
Savour a one-time serving of one of the two highlights of ‘Chef’s Special’.

The Lobster and Alaskan Crab en Papillote with Asian spices is prepared by wrapping seafood in parchment paper in the oven for baking.

As it cooks, the liquid and moisture stay confined, accentuating the flavour of the seafood while maintaining its juicy composition.

The resulting dish was fragrant, spicy, and herby; with Alaskan Crab buttery, mildly sweet, and rich in taste.

Chef’s Special – Sea Urchin in Shell, Nomad Caviar, Soft Roasted Cauliflower, Ponzu Wafu in Pipette (one-time serving on weekly rotation)
A signature preparation, the Sea Urchin in Shell is a beautiful-looking dish that promises a melange of textures and deliciousness.

Rich in its composition, the plate highlights the uni – its oceanic salty-meets-sweet taste and smooth feel.

The addition of Nomad caviar results in a marriage made in water, as both ingredients’ creamy and buttery textures merge subtly.

The contrasting, or some might say balancing, flavour came from the roasted cauliflower. It was smoky with a bite.

The chef accompanies the seafood with a Japanese ponzu wafu sauce-filled pipette. You can then add droplets per preference, elevating or lowering the tanginess of every mouthful.

Seafood on Ice
Fans of seafood on ice would love the pure freshness and variety.

Take your pick from Boston Lobster, Poached Fresh King Prawn, Fresh Jumbo Clam, Fresh Black Mussels, Baby Crawfish, Alaskan King Crab, Chilean Half Shell Scallop, Jellyfish, Sea Whelk to Baby Octopus.

Asian Chef’s Creations
Other new highlights include rice curries, fried seafood porridge, and oven-baked dishes served to the table, such as the Three-Cheese Baked Lobster with Charcoal Crumble and Nuts.

If you love the Asian flavours, then there is a whole lot of choices include Chilli Crabs, Black Pepper Mud Crab, Kam Heong Mud Crab, to Salted Egg Bamboo Lobster.

Create-Your-Own Noodle Station
The dynamic experience extends to a create-your-own noodle bowl station and a do-it-yourself taco counter.

At the noodle station, there is a pretty good selection of ingredients to elevate your noodles.

Choices include premium quality and mildly sweet Boston Lobster, Hokkaido scallop, tender Alaskan Crab, Prawns, and other fresh alternatives.

Further boosting the flavour profile of the noodles are various broths. The Laksa gravy is creamy and spicy.

Alternatively, you can pick the protein-rich prawn broth or the sweet and salty clear fishball broth.

Boston Lobster Roll Station – Live Station
Diners can watch the chefs in action at live cooking stations, including a Boston Lobster Roll station.

This is actually a sushi roll, and you can customise just as you like using persimmon, avocado, butter, Himalayan salt and more.

Seafood Taco – Do-It-Yourself Station
The Do-It-Yourself Seafood Taco station offers tasty, tender, and sweet Hokkaido Scallops with Peruvian spices and buttery Hamachi (yellowtail) with Southeast Asian spices.

Load up your taco with an array of toppings. Choices range from both vegetarian options and seafood to different condiments.

So, you can go with avocado, cucumber, tomato, crab meat, or red radish. And for dressing, there’s the smoky, spicy chilli sauce, the creamy nacho cheese sauce, and more.

Chef’s Inspiration A La Minute Liquid Nitrogen Ice Cream
Integrating the seafood theme into dessert is never an easy task.

However, the chef accomplishes this feat through not one but two unique creations that promise a sweet and savoury culmination to a memorable dining affair.

First, there’s the Liquid Nitrogen Ice Cream which has a dense and invigorating flavour.

On top, the chef then adds Fish Floss, Salted Walnuts, and Caramel.

Each of the three toppings brings a different aspect to the dessert. The fish floss has a roasted savoury taste, the walnuts add a nutty bite, and the caramel is sweet and sticky.

Chocolate Salted Egg Yolk Lava with Chocolate Sorbet
When it comes to desserts, it doesn’t get any more exotic than the Chocolate Salted Egg Yolk Lava with Chocolate Sorbet.

The salted egg yolk had a lovely sweetness-meets-savoury aftertaste that would come as a pleasant surprise.

At the same time, the sorbet is refreshingly cool on the tongue. However, the crispness of the fish skin juxtaposing the creamy sorbet gives this sweet concoction textural depth.

For other classic dessert treats, cave into timeless creations such as the Pulut Hitam, French Vanilla Custard Tart and an array of Peranakan kueh, cakes and puddings.
