Using a recipe from Chef Patrick’s family, this Penang Assam Laksa is a hearty concoction made using mackerel fish.

A little spicy and sour at the same time, you would love the broth’s fruity, sweet, tangy, and savoury notes from the tamarind, pineapple chunks, and ginger torch flower.

Also available on rotation at the noodle station include Mee Soto Ayam, Penang Prawn Noodle Soup, and Singapore Laksa.

Kam Heong Lala (SIN-MA Lunch Buffet Exclusive)
Another Malaysian favourite served at Spice Brasserie is Kam Heong Lala, comprising fresh thin-shelled clams stir-fried in a spicy kam heong sauce.

Harmonizing the mildly sweet and briny flavour of the clams, the sauce had a piquant taste, extracted from a mix of singular ingredients like curry leaves, garlic, dried shrimp, shallots, and other herbs and spices.

Braised Beef Brisket with Radish (SIN-MA Lunch Buffet Exclusive)
A meaty dish guaranteed to warm you up, Spice Brasserie’s Braised Beef Brisket promises tender, melt-in-your-mouth chunks of slow-cooked beef brisket prepared in an aromatic sauce.

Diners can expect a selection of premium items from fresh Tiger Prawns and Half Shell Scallops to Stone Crab Claws, Gong Gong, and Black Mussels.
