Ask the Ngee Ann Polytechnic alumni or students what’s their favourite canteen food, it may just be Kaki Fuyong.

I happened to chance upon this stall at Beauty World Food Centre which may resonate with the memories of many Ngee Ann Polytechnic alumni – Osa Kaki Fuyong.

My own introduction to Kaki Fuyong occurred during my time teaching in campus.

I remember asking my students for food recommendations, and Kaki Fuyong at Makan Place food court often comes up. I had that quite many times back then (and always avoided peak hours because it was very popular.)

Its allure has been re-created by two ex-chefs who have established their own stall, with “Osa” at the front, representing Osaka.

So what’s Kaki Fuyong?

Simply put, Kaki Fuyong is a combination of ’fuyong’ egg (reminiscent of a fluffy omelette) and meat harmoniously served on a sizzling hot plate.

The dish’s aesthetic is enriched by the glistening, translucent teriyaki-like brown sauce and is accompanied by rice and miso soup.

Osa Kaki Fuyong serves the signature dish with varying toppings, such as oysters, chicken patty, fried oyster and scallop, ebi fry, salmon, and beef.

The basic version is sold at $5.50, with options of cheese top-up at additional $1. You can also request for Japanese curry or Kimchi cheese variants.

I opted for the signature Chicken Karaage Fuyong with Rice ($5.50), priced reasonably for its portion.

The sauce, a melodious blend of sweetness and savoury notes, appears to be a blend of flavours of teriyaki and soy.

Its richness complements the soft, fluffy texture of the egg, which also features hints of charred edges.

The Chicken Karaage stands out for its thicker and chunkier texture, not quite like the usual ‘factory-style’ ones.

The experience is elevated by the consistent warmth of the hot plate, ensuring each bite is as gratifying as the first. Even as I was about the finish eating, the plate remained quite hot.

Now you can savour this comforting dish without the necessity of a campus visit.
