At the heart of 125 Bukit Merah Lane 1, within the lively confines of Hong Kong Street Chun Kee coffee shop, a ‘no name’ Wanton Mee stall humbly serves up plates of nostalgia with fried eggs.

While officially unnamed, some call this stall “Tjao Sin Wanton Mee”, due to its old location.

The stall is humble and fuss-free, serving up plates of old school Wanton Mee ($4, $5), a dish that hails from the heydays of simplicity.

But well, well…

Among the usual suspects, it offers an optional fried egg (additional $0.70), a sunny side up that is drizzled with a little dark soy sauce — some difference to the classic.

This addition is not ‘gimmicky’ or just for show.

It is a heartwarming tale of an aunt’s love, frying eggs to give her vegetarian nephew the gift of protein. This act of care, once a family ‘secret’, got discovered by other customers.

After keen-eyed foodies saw those fried eggs, they decided they too wanted a piece of this wholesome treat.

Dressed in a soy sauce and oil seasoning, the noodles boast a springiness and a dry-QQ texture.

In a mix of lard, sesame oil, and chili sauce, this was a flavourful experience of lardy, aromatic, and spicy notes.

Breaking the egg yolk and swirling it into the noodles morphs the dish into an indulgent, creamy delight.

The char siew is passable — just okay, really.

The soup, too, which was kind of plain-tasting might leave some wanting.

Tjao Sin Wanton Noodles offers a good old-school style plate of Wanton Mee. Whether you drench your noodles in yolk or enjoy the egg as a separate simple ‘delicacy’ is up to you.
