Seafood Paradise, a well-known name in the realm of live seafood and local cuisine, has recently partnered with Ms. Maria & Mr. Singh (Singapore) – the dining offspring of the esteemed Chef Gaggan Anand.

Now, imagine local, Indian, and Mexican flavours in a single place.

This exclusive culinary collaboration can be experienced at two locations: CQ @ Clarke Quay and VivoCity.

The outcome of this union is an extraordinary menu that marries Singaporean-style seafood dishes with Indian-Mexican influences, brought to life by two prominent figures in the local dining scene.

Seafood Paradise is known for Singapore-style seafood dishes including the Signature Creamy Butter Crab, Steamed Dragon Tiger Grouper with Preserved Turnip, and Scottish Bamboo Clam with Minced Garlic, among others.

Ms. Maria & Mr. Singh (Singapore) by Chef Gaggan Anand – famous for his innovative and imaginative culinary creations, brings a touch of Indian-Mexican marriage to the table.

This special menu will be officially available starting from 1 November 2023, and will only be offered for a limited time.

Gaggan’s Crab Curry with Seafood Paradise Creamy Butter Mud Crab topped with Coconut Crumbs ($128.00 for 1kg)
The standout dish I tried – creamy, spicy, and slightly tangy.

This delectable dish features Sri Lankan crabs known for their firm texture and sweet-savoury profile.

What truly sets this dish apart is the inclusion of Seafood Paradise’s renowned fragrant creamy butter sauce combined with Chef Gaggan Anand’s crab curry – which elevates the crab to new heights.

The famous crab curry (featured in many shows) brings a South Indian twist to the plate. It is enriched with tamarind, giving it a tangy kick, and expertly thickened with coconut milk.

Loved it when the succulent crab and fluffy manutou were dipped into the luscious curry, which created a taste explosion that was exciting and not like the usual styles.

Grilled Squid served with Salsa Taquera ($28.90)
Salsa taquera known for its bold and vibrant flavour, makes a difference to the sweet and tender grilled squid here.

The squid itself had slight smokiness from the grilling process, while the salsa taquera added a refreshing tartness and a moderate level of spiciness to the dish.

Fresh Jumbo Canadian Oyster with Salsa Taquera, Pickled Shallots and Tobiko ($12.90 per pc, minimum order of 2pcs)
A fresh and moderately spicy twist to plump Canadian oysters.

The salsa taquera dressing added a lively kick to the oysters, while there was also pickled shallots and briny tobiko that enhanced the oceanic sweetness with a sharp punch and mellow saltiness.

Baked Jade Perch with Tamale Masala Sauce wrapped in Banana Leaf ($68.90, 700g)
The dish features a whole jade perch marinated in tamale masala sauce for an explosion of spicy flavours.

The fish itself had a smooth and delicate flesh, that was complemented by the rich and aromatic tamale masala sauce.

You wouldn’t find the sauce overpowering the sweetness of the fish.

Baking the fish in a banana leaf wrap not only retains its juiciness but also imparts an earthy char without scorching the skin, adding depth to the dish’s overall profile.

Stir-fried Live Tiger Prawn with Gaggan’s Crab Curry Base ($29.90)
These tiger prawns were truly succulent, and what sets them apart was the infusion of aromatic herbs and spices from Chef Gaggan Anand’s crab curry.

This infusion lent the prawns a richer depth of flavour, which was further enhanced by the stir-frying process that imparted wok hei.

You get juicy prawns bathed in a tasty curry base – both fragrant and satisfying.

Seafood Paradise Mee Goreng with Ms. Maria & Mr. Singh’s Masala served with Papadum ($25.90)
The infusion of robust masala spices, inspired by Indian flavours, transformed this familiar dish into a flavourful sensation.

The Mee Goreng itself was robust and fragrant, with the masala spices adding more depth and complexity to every bite.

The addition of papadum, a thin and crispy Indian flatbread, included a contrast in texture.

I can say that this version of Mee Goreng has become one of my favourites in Singapore, thanks to its flavourful, aromatic profile and wok-hei. Shiok!
