Change, they say, is the only constant. As the cityscape of Singapore continues to evolve, so do the dining establishments that have become part and parcel of our culinary journey.

One such iconic buffet institution, Spice Brasserie at PARKROYAL on Kitchener Road, finds itself at a poignant crossroads.

With the impending cessation of management by Pan Pacific Hotels Group in November 2023, the esteemed buffet restaurant is slated to draw its curtains at the end of October.

A bittersweet moment, indeed.

To thank its diners, the establishment is offering a generous 20% discount on their buffets from now till 30 October 2023.

All it requires is a simple key-in of “SBTHANKYOU20” during the reservation online.

Spice Brasserie is known for its three Halal-certified buffet spreads. It has been a go-to for many seeking an Asian-style seafood experience, and a variety of local and Asian fare.

Their SIN-MA Flavours Weekday Lunch Buffet pays homage to the rich intermingling of Singaporean and Malaysian culinary traditions at affordable pricing of $35 nett per adult (price before discount)

And as night descends, the Asian Street Food and Seafood Dinner Buffet lights up the evening with its tantalising offerings including Crabs and Slipper Lobsters.

For those who fancy a languid weekend feast, dive into the Lunch-Cha Weekend Lunch Buffet. It includes an all-you-can-eat lunch buffet from 12pm to 2:30pm, transiting into an elegant afternoon tea affair from 2:30pm to 4pm.

Revel in an exquisite assortment of Asian desserts and kueh, and pair them with handpicked selection of aromatic teas.

With a generous 300-seat capacity, the establishment never feels too crowded, allowing for intimate conversations even in the midst of a bustling dining floor.

Leading the restaurant is Executive Chef Patrick Ooi, who weaves his personal Penang heritage into the buffet spread.

Using cherished family recipes passed down through generations, some dishes evoke the very soul of Penang’s street food scene while also paying homage to beloved flavours of Singapore and Malaysia.

A highlight is the Asian Street Food and Seafood Dinner Buffet prepared in the Halal-certified kitchen, along with interactive live stations.

Check out some of the standout dishes from the Asian Street Food and Seafood Dinner Buffet at Spice Brasserie: (selected dishes will be featured on a rotational basis on the buffet)

Chef’s Wok – Chilli Crab
An iconic Singaporean delight, the crab was bathed in a rich, tangy sauce that was both spicy and sweet. Don’t forget to get some mantou to mop up the thick and eggy sauce.

Chef’s Wok – Kam Heong Crab
Transport your taste buds to the bustling streets of Penang with the Kam Heong Crab.

“Kam Heong” translates to “golden fragrance” and true to its name, the wok-fried crab is fried with a mix of dried shrimp, curry leaves, and a medley of aromatic spices.

Chef’s Wok – Black Pepper Slipper Lobster
The black pepper slightly intense but not overbearing, was the good counterpart to the sweet, succulent lobster meat.

Chef’s Wok – Salted Egg Slipper Lobster
The slipper lobster, known for its tender and sweet flesh, is generously coated in a luxurious salted egg sauce.

The sauce which is rich with grainy textures and a creamy consistency, offers a luscious contrast to the lobster’s delicate meat.

Fresh Cold Seafood on Ice
Spice Brasserie serves up Fresh Tiger Prawns and Half Shell Scallops that are clean on the palate with a slight brininess.

The Black Mussels and Gong Gong are standard, which you can enhance with the Thai Nam Jim or Sukiyaki Sauce.

Appetiser Salad
The Thai Spicy Glass Noodle Salad offers a texture-rich beginning with its chewy vermicelli and thinly sliced chicken, though it might benefit from a touch more heat for those accustomed to traditional Thai spiciness.

The Butternut Squash Quinoa Salad is pleasantly nutty, providing a counterpoint to the heavier flavours on offer.

Japanese Sashimi & Sushi
Standard fare in the buffet circuit, the sashimi cuts—Fresh Salmon, Maguro Tuna, and Sea Bream—retain their freshness, alongside Assorted Sushi & Maki Roll.

Tandoor Station
The aromatic draw of the Tandoor Station is hard to ignore. The Assorted Freshly Made Tandoori Naan is a highlight.

The Butter Chicken, with its creamy consistency, pairs well with the Biryani Rice, though the latter might be a tad oily for some.

Charcoal BBQ Station
The Beef and Chicken Satay are dependable choices with their well-marinated meat and nutty sauce.

The rotating offering of either Asian Spice Marinated Lamb Flap Rib or Beef Ox Tail is where the excitement lies, each packed with a rich depth of flavour that’s accentuated by the smokiness.

On The Griddle
Experience the thrill of watching skilled chefs expertly fry up your favorite local dishes on a sizzling griddle.

The Fried Oyster Omelette boasts a crispy exterior, but could benefit from more oysters. On some days, you would get an eggy Carrot Cake with Shrimp.

Noodle Station
Offering rotating choices from Singapore Laksa to Penang Prawn Noodle Soup, each noodle dish is reminiscent of classic Asian street food.

Look out for the Penang Assam Laksa. Using a recipe from Chef Patrick’s family, this is a comforting concoction made using mackerel fish.

A little spicy and sour at the same time, you would love the broth’s fruity, sweet, tangy, and savoury notes from the tamarind, pineapple chunks, and ginger torch flower.

Sweet Tooth Moments
The Cempedak Crumble Cake is their signature cake which is made in-house, with the tropical fruit’s unique taste shining through.

Traditionalists will appreciate the Assorted Nonya Kueh, with their gentle sweetness and glutinous textures. The Durian Pengat with Sticky Rice is rich and creamy, popular among diners.

Also look out for the Hot or Cold Dessert of the Day such as refreshing Cheng Tng, and Fresh Tropical Sliced Fruits.

Teppanyaki Ice Cream
Ending on a sweet note, head for this unique dessert experience at the live Teppanyaki Ice Cream station.

Here, ice cream is not just a dish; it is a performance. Watch as the skilled chefs craft the ice cream selection right before your eyes on a chilled metal plate, ensuring every bite is as fresh as possible.

You can have the Dark Chocolate Ice Cream with Pecan Nut, while the Mango Ice Cream with Pomelo & Sago is a refreshing palette cleanser.
