Tsujihan Don ($21.80)
The reveals a symphony of eight premium seafood and sashimi items gracefully poised atop a bed of fluffy Japanese rice.

These include rich salmon, tuna, delicate hotate scallops, kani crab meat, negitoro minced tuna, sweet tamago Japanese omelette, buttery diced avocado, and a vibrant finale of tobiko flying fish roe.

Yet, the Kaisendon experience at Tsuta is not just a static feast. It invites diners to interact with their meal for a more personal touch in the consumption.

I would recommend savouring this in three parts.

First have this unadulterated, to bask in the unmasked freshness of the ingredients. Or just add a dash of soy sauce.

Next, include some of the zingy wasabi ponzu sauce for a refreshing bite.

Once you are past the halfway mark, a hot chicken broth can be introduced. Pour it within (like an Ochazuke) to enjoy the comforting warmth of the broth along with flavours from the seafood.

Premium Ebi Soba ($18.80)
One of the latest additions to Tsuta’s menu in Singapore, the Premium Ebi Soba brings together an exquisite medley of premium ingredients in a rich broth.

The bowl is included with whole Tiger prawn, Kurobuta pork loin and Iberico belly, Kuruma ebi wontons, garnished with fresh corn and spring onions.

I loved the seafood broth which was actually quite deeply rich, and thus satisfying.

Special mention to the wonton which was generously stuffed with succulent shrimp and seasoned with aromatic spices.

Alternatives like the Ebi Soba Regular ($14.80) and the Ebi Soba Light ($12.80) are also available, catering to various appetites and preferences.

Tonkotsu Soba ($12.80)
For something more classic, this tonkotsu soup base is made from premium black pork broth boiled under high temperature for over 5 hours.

This extracts the collagen-rich essence from the bones and trotters and imparts fragrance and flavour to the dish.

To balance the creamy taste, they added Hokkaido kelp and shiitake mushrooms for some herbal and earthy notes.

If you prefer bowls with stronger flavours, there are also the Kurobishio Tonkotsu Soba ($13.80) with aromatic ‘Mayu’ (black garlic oil); or Mala Tonkotsu Soba ($14.80) with a notch of spicy Sichuan peppercorn kick.

Vegetarian Soba ($18.80)
The broth is simmered mushroom stock that combines over 10 types of vegetables for 90 minutes.

Enhanced with miso paste, this renders a vessel of vibrant, earthy flavours.

The lavish-tasting soba noodles find company in plant-based minced meat, crispy fried leek, crunchy lotus root chips, and lush grilled tomatoes.

Wagyu Beef Don ($23.80)
A savoury bowl featuring pan-seared Wagyu beef, enrobed in a proprietary steak sauce, and crowned with a delicately poised onsen egg and crispy garlic chips.

Wagyu Beef Roll ($22.80)
Luxurious, meaty variant of the usual maki roll, featuring prime U.S. Wagyu beef delicately laid and embellished with steak sauce, fried garlic chips, white sesame seeds, and chives.

Though when I put the entire piece in the mouth, the mixture of flavours reminded me totally of having the Wagyu Beef Donburi.

Spicy Salmon Maki ($19.80)
Fresh, buttery salmon cubes are rolled with spicy kani mayo, tobiko, Japanese cucumber, and tamago.

The roll is completed with a drizzle of mentaiko mayo and sweet salmon sauce, providing a burst of creamy-meets-spicy flavours that complements the freshness of the salmon.

Nami Maki (from $4.80)
Nami Maki? These are open-faced seaweed rice rolls, available in enticing options from Avocado Ebi, Kani Mayo to Spicy Salmon.

The Spicy Salmon Nami Maki ($7.80) is my personal favourite for those who enjoy gentle kick with their sushi rice.

I had the Deluxe Trio ($13.80) comprising of Spicy Salmon Nami Maki, Negitoro Nami Maki with tender savour of minced tuna meat, and Ebi Fry Nami Maki with prawn deep-fried to a golden crunch.

Rice Paper Tacos (from $6.80)
The Mentai Salmon ($7.80) parades cubes of mentai salmon adorned black sesame; while the Avocado Ebi ($6.80) brings forth a creamy ebi salad intertwined with buttery avocados.

How you have this: scoop up fresh sashimi cubes, and place them on delicate, wafer-thin rice paper.

Have them in one satisfying mouthful, for a light snack without being overwhelming.

For those caught in the dilemma of choice, get the Taco Set ($11.80) with duo selection.

Truffle Salmon Carpaccio ($18.80)
A luxurious sharing dish showcasing Japanese Mizuna (a type of mustard green), strategically laid beneath thin slices of Norwegian salmon sashimi.

Tomato flakes and dill are placed atop, crafting a plate that is quite visually enticing.

The salmon, with its rich, velvety texture, harmoniously mingles with the truffle, while the mizuna provides a peppery contrast.
