Bi Tai Mak, also known as 老鼠粉 Lao Shu Fen in Chinese, is a type of rice flour noodles that are short, flat, and slightly curved shape, resembling rat tails.

Its name literally translates to “mouse tail noodles” in English, but this is purely due to its appearance and has nothing to do with its ingredients.

It is not common to find a “silver needle noodle” specialty hawker stall in Singapore, and Shu Heng Bi Tai Mak 數興老鼠粉 has made quite a name for itself with its Johor-style Bi Tai Mak.

With its first stall at Kebun Bahru Hawker Centre at Ang Mo Kio, it opened another outlet at Hong Lim Food Centre.

It is not that easily found though, at the back-facing side on Level 1.

The menu at Shu Heng Bi Tai Mak offers a variety of dishes, including the popular soup-style Johor Bi Tai Mak ($4, $5), Mushroom Pork Minced Fish Ball Noodles ($4, $5), Pork Leg Noodles ($5.80, $6.80), and Fishball Minced Pork Noodle ($4, $5).

Customers can choose between dry or soup versions.

I know some people have the perception that Bi Tai Mak (the soup version) is eaten when you feel unwell, but don’t let this deter you.

I had the dry Shu Heng Abalone Bi Tai Mak ($6.80, $8.80) and loved it for the slippery, smooth texture of the silver needle noodle in a flavourful sauce base.

For its price, there were quite many ingredients such as fishball, pork ball, braised mushrooms, fried shallots, and a specially made minced pork mix with pork lard fragrance.

The abalone added a touch of luxe, though it was probably the weakest link in the bowl due to the overly-chewy texture.

The Mushroom Minced Pork Fish Ball Noodles ($4, $5) would be a safe choice, with generous serving of well-seasoned minced pork and tasty mushrooms, along with fish balls and fishcake.

All well-tossed in the sauce for a satisfying, budget-friendly eating experience.


I like that the noodles tasted freshly made, with a texture that was neither too chewy nor too soft.

Each component of the dish, especially the well-marinated minced pork, speaks of the attention to details.
