Even though I really love Wanton Mee a lot, it took me a while to visit Chun Noodle Bar at Amoy Street Food Centre.

Perhaps missed opportunity in terms of timing, as it is only opened weekdays from 10am to 3pm.

Better known as Chun Feng Man Mian 椿风满面, the stall offers a modern take on traditional wanton noodles.

Their menu includes the more classic items like the Signature Char Siu Noodle ($5, $7), but there are also Truffle Char Siu Noodle ($9) and soup-based Char Siew Tonkotsu Noodle ($5, $7).

For those intending to go light, consider the Wonton Tonkotsu Soup ($5) with dumplings.

These Signature bowls feature handmade egg noodles, Iberico char siew smoked with oolong tea leaves, fried and soup wontons, and a special housemade sauce.

There used to be ikura added, but am glad they removed it (as I felt it may not gel well and increased cost unnecessarily).

While this may not be your usual traditional type, the noodles stood out with its al dente texture, balancing the fragrant savoury sauce.

The char siew was another highlight – relatively thick, tender, and sweet slices that strike the right balance between lean and fatty.

The accompanying small bowl of tonkotsu broth, somewhat reminiscent (this was lighter) of what you would find in a Japanese restaurant, further enhanced the experience.

The only main weak link I thought were the soup wontons, as the minced pork fillings didn’t taste as fresh as I would have liked.

Chun Noodle Bar is a noteworthy stop for those exploring Amoy Street Food Centre with its modern take of Wanton Noodles, especially for the nuanced flavours and the quality of the noodles and char siew.
