[Hong Kong] Soufflé pancakes seem to have taken off in Japan and grown in popularity in other part of the world.

The interest for these pancakes in Hong Kong started with Flipper’s, which spots a crazy queue going up to hours on the weekends.

am.pm located along Nathan Road in Mongkok (closed to the Yau Ma Tei side) is another one of the hot favourite spots to go for these jiggly soufflé pancakes.

The bright and fun yellow bus shop front will surely catch your attention, if not for the youthful crowd gathering around the booth waiting for their pancakes.

Unlike Flipper’s, am.pm Hong Kong is not a sit down café but more of a takeout booth.

So expect to order, pay, wait and then eat on the spot while standing around.

Apparently, they have also been featured on the immensely popular Korean show Running Man, which propelled their fame even further.

On top of the original soufflé pancakes, some of the other flavours include tiramisu, creme brulee, black sugar milk, mixed berries soufflé pancakes.

The pancakes are made fresh upon ordering, so a typical 8-10 minutes’ wait on a no-queue day is to be expected.

The best way to pair these thick jiggly pancakes is to order them with the soft serve.

The smooth and creamy soft serve (+10HKD, SGD1.80) made with Hokkaido milk makes the entire dessert more delectable and actually goes very well with them.

Their signature best seller, Crème Brûlée Souffle Pancake and Soft Serve (HKD60, SGD10.50) were 2 thick but super fluffy pancakes.

For more dramatic effect, the pancakes are further topped with a nice layer of custard cream and then torched for the caramelised effect.

Surprisingly, this was not too sweet despite how it sounds and so perfect with the soft serve.

The Tiramisu Souffle Pancakes (HKD45, SGD7.90) had a nice creamy texture and strong hints of coffee but was overall sweeter than the Crème Brulee.

From what I noticed, it seems they are constantly changing up flavours and introducing new items, like the new matcha and white chocolate lava pudding chiffon pancakes with “flowing” centres.

Even their soft serve flavours are also constantly changing.

These pancakes are pretty good and airy but also quite filling to have on your own. Definitely recommend them for sharing.

Oh yes, despite the name, they only start operating from 1pm.
