Fancy some ‘Michelin’ Mooncakes? Summer Pavilion at The Ritz Carlton, Millenia Singapore is the only hotel Cantonese restaurant to be awarded a Michelin Star in the inaugural Michelin Guide Singapore 2016.

Already known for their excellence in Cantonese cuisine, Chinese Executive Chef Cheung Siu Kong and his team have created a range of artisan snowskin mooncakes alongside a variety of exquisite baked mooncakes, befitting of their Michelin star honour.

The two new flavours to look forward to this year are the Mini Custard Lava with Vanilla, and Mini Snowskin ‘Mao Shan Wang’ Durian, while the Assorted Mini Snowskin Martini makes a return due to popular demand.

Mini Custard Lava with Vanilla
$72 (8 pcs)

Not just salted egg yolk, this newly introduced Mini Custard Lava with Vanilla mooncake also incorporates Tahiti vanilla and Madagascar Bourbon vanilla for that added mildy sweet and fragrant flavour.

This happens to be one of my favourites, not only because of the addition of salted egg yolk into the paste, but because each mini mooncake tastes delicate and easy on the palate without being too heavy.

Personally, I recommend two different ways to consume this: You can enjoy the mooncake warm (heat up in the microwave oven for 10 seconds or less) to savour the molten lava custard filling. Let it OOZE Or simply relish it at room temperature.

Wine Pairing Tip: This is a special sweet ice wine. The Inniskillin from Canada is made of Cabernet Franc and Riesling grapes which are harvested at -10 degree Celsius at the end of January to ensure that maximum sugar content is extracted from the grapes.

This ice wine is often paired with desserts like salted crème brulee, and goes excellently with the Mini Custard Lava with Vanilla Mooncake which has a mild-savoury finish.

Mini Snowskin ‘Mao Shan Wang’ Durian
$70 (8 pcs)

I’ll be honest here. While I am not an immediate-fan of the ‘Mao Shan Wang’ Durian – the King of Fruits, this Mini Snowskin ‘Mao Shan Wang’ Durian is surprisingly tasty.

Best enjoyed chilled, I enjoyed the creamy, velvety texture of this new mooncake flavour.

Take small bites to appreciate the unique bitter-sweet taste of the Mao Shan Wang durian and let it linger.

Wine Pairing Tip: Pair with Errazuriz Late Harvest Sauvignon Blanc, a Chilean sweet wine from the Casablanca Valley. When I had this, the wine brought out a fuller flavour of the durian, and enhanced the tasting experience without being overwhelming.

Very suitable pairing. Try it on your own.

Assorted Mini Snowskin Martini
$70 (8 pcs)

Prefer some alcohol in your mini snowskin mooncakes? Try the Assorted Mini Snowskin Martini, which comes in 4 different flavours consisting of Appletini, Berrytini, Coffeetini, and Lycheetini.

The ever-popular favourite is the pretty-in-pink Lycheetini with fruit liquor and real lychee bits; the purple-coloured Berrytini is imbued with vodka blended with mixed berries; the green Appletini has green apple liqueur added, while the brown Coffeetini is infused with dark coffee liqueur.

Wine Pairing Tip: A snowskin mooncake such as the Lycheetini pairs suitably well with a Moscato D’ Asti, an Italian sweet sparkling wine from Piedmont.

The Moscato D’Asti wine has a mild finish and silky texure, and is lightly, sweet with notes of flowers and peach which complement the unique fruity flavours of the mooncakes.

White Lotus Seed Paste with Double Yolk ($76 for 4 pcs), White Lotus Seed Pasta ($66 for 4 pcs), White Lotus Seed Paste with Black Sesame ($70 for 4 pcs)

If you prefer classic mooncake flavours synonymous with the Mid-Autumn Festival, go for the tried-and-test traditional White Lotus Seed Paste with Double Yolk mooncakes. Weight-watchers will be delighted to know that the paste is reduced in sugar, making it a healthier option.

The mooncakes contain quality silky-smooth lotus seed paste encased in a golden brown baked skin.

Wine Pairing Tip: With Baron Bornemisza Tokaji Aszu 6 Puttonyos, a Hungarian wine from the Tokaji wine region.

This golden amber-coloured dessert wine has a honey nectar-like finish, which perfectly complements the umami flavour from the double yolk mooncake, enhancing the aftertaste.
