Purple is In. The colour also symbolises royalty, nobility, luxury. As we see the trends moving towards purple food, this may stop your tracks if you have not seen it before… Purple instant noodles.

To be correct, it is the KOKA Purple Wheat Noodles.

Why is it Purple?

Worry not, the luscious colour actually comes from the presence of Anthocyanins naturally found in purple grains. Anthocyanins are the same antioxidants as those found in bilberries and blueberries.

If you want to spice your noodles up, here is a recipe of KOKA Purple Wheat Noodles Aglio Olio with Shrimp & Chilli:

Ingredients
2 packets KOKA Purple Wheat Noodles Aglio Olio
5-10 shrimps, peeled and deveined (Alternatively, you can use pre-cooked shrimps for greater convenience.)
1 teaspoon chopped fresh parsley leaves.
1 teaspoon crushed red pepper flakes OR chopped red chilli padi
4 cloves of garlic, peeled and minced
1 teaspoon of olive oil
Optional: 1 tablespoon of freshly grated Parmesan cheese

Instructions
1. Cook KOKA Purple Wheat Noodles in boiling water for 2 minutes.
2. Drain noodles and set aside.
3. Heat a pan on medium heat and add olive oil.
4. Add chopped garlic and sauté for 30 seconds.

5. Add KOKA Purple Wheat Noodles cooked earlier.
6. Add shrimps, chilli flakes/chopped chilli padi and seasoning mix from KOKA and mix well. Cook for 2-3 min.
7. Add parsley in.
8. Turn off the heat and serve.

Optional: You can sprinkle some grated parmesan cheese on top. Enjoy!

Am happy with the outcome of the KOKA Purple Wheat Noodles Aglio Olio with Shrimp & Chilli

To be honest, the noodles did taste healthier than the usual. The seasoning was not as blatantly salty as I would have imagined, with a garlicky trace.

My recommendation is to cook the noodles in just 2 minutes or so, then drain and rinse it in cold water, and toss with some olive oil or the canola oil provided. This will give it a more al dente and springy bite, suitable for an alternative for pasta.

I can imagine some other possible ways to cook these noodles include stir-frying like mee-goreng, or tossing it with vegetables like a salad.

If you like something no-fuss, some chilli, parsley and parmesan will do the trick.
