Brother Bird popular for its hybrid mochi croissants and creative-flavoured pastries, will opening an outlet in the East of Singapore at Tampines 1.

It will likely open in March 2023, though the exact date has yet to be confirmed.

There are currently two outlets at 114 Lavender Street (CT Hub 2) and Raffles Place (CIMB Plaza #B1-23), and a pop-up stall at Shell 2 Boon Lay Avenue.

In case you are wondering why is it call “Brother Bird”, one of the owners is nicknamed “bird” because he likes eating granola.

They are known for various types of pastries such as the twice-baked croissant, the regular croissants (some pumped with fillings), chocolate series, and Danish pastries.

Flavours change seasonally.

The more recent edition sees flavours such as Rocher Croissant, BB Original Croissant, Mentaiko Prawn, Maple Pecan Croissant, Mango Sticky Rice, and Ham & Cheese.

The more adventurous should try the twice-baked croissant, to experience the lightly-crisp exterior which contrasts with the slightly sticky and chewy mochi slab in the middle.

The pastry supposedly takes a long process of 12-layer folding to create a more-flaky texture.

So not like the typical airy and fluffy croissants you may be more used to. They also happen to keep better in this humidity.
