Located at the Yuhua Place Market & Hawker Centre, Hua Xing Bak Kut Teh 華兴肉骨茶 serves one of the best pork rib soups in the West with loyal following.

You can easily reach this hidden gem in Jurong East via MRT, and is perhaps about a 5 to 10 minutes’ walk from the Chinese Garden MRT Station.

Over at Yuhua Place Market & Hawker Centre, some of the popular stalls there include Lai Heng Handmade Teochew Kueh, Xing Yun Hainanese Boneless Chicken Rice, Poon Kee Wanton Noodle, Lu Fang Zhou Pin, Famous Sungei Road Trishaw Laksa, and Jing Jing Fried Carrot Cake.

Another famous Bak Kut Teh Shop Joo Siah Bak Koot Teh, is a short walk away.

Hua Xing was founded some 40 years ago and was passed on to Phua Swan Yeow as second-generation owner of the stall.

Their business expanded from only 1 stall unit back in the 1990s to today’s 2 stall units serving Pork Rib Soup and Steamed Fish.

They are also popular for their Teochew-style Steamed Fish & Asam fish served with preserved vegetable (kiam chye), tomato, ginger, cilantro, and a strip of pork fat. For a heavier meal, try ordering their pig’s trotter which has a soft and tender texture.

Michelin Guide describes Hua Xing’s signature dish as having a strong, peppery flavour and aromatic pork ribs.

Aside from the peppery notes, the broth carries a distinct savoury pork flavour and a natural sweetness.

Just the right amount of salt in the broth enhanced the overall taste, balancing out the spicy flavours. A mix of soy sauce, black and white peppers, garlic, star anise, cloves, cinnamon, and other seasonings make the broth herbal and savoury.

I found the soup light and mildly peppery which was not bad, but some would prefer a base that is more intense with body.

Simmered over low heat for hours till tender, the pork rib meat becomes tender but still with a slight resistance – can be slightly softer.

Complete the meal with a plate of rice and soft cabbage or mui cai (pickled Chinese mustard) prepared the traditional way – dried, salted and steamed.

Though often eaten for breakfast, you can enjoy this at Hua Xing up to dinnertime. Feel free to have your soup refilled if you want more.
