Kway Chap 粿汁 is a Teochew-style hawker dish with assortment of pork and pig’s intestines cooked in a braising sauce, served together with broad rice sheets called the ”kway”.

Some of the popular Kway Chap stalls in Singapore include Chris Kway Chap (Bedok 216), To-Ricos Guo Shi (Old Airport Food Centre), Cheng Heng Kway Chap and Braised Duck Rice (Holland Drive), Garden Street Kway Chap (Serangoon Garden Food Centre), 284 Kway Chap (Bishan), and Quan Lai Kway Chap 泉来粿汁 (MacPherson). Just to name a few.

To be honest, it was quite surprising to find Kelantan Kway Chap at Berseh Food Centre (Jalan Besar) listed in the recent Michelin Guide Singapore with a Bib Gourmand.

Not that the stall is anything bad, just wondering about the other well-loved stalls that was left out.

Other than Kway Chap ($5 onwards), Kelantan Kway Chap also sells an assortment of Braised Delights ($9, $11, $13), Braised Pig’s Trotter ($5.50, $6.50), Braised Chicken Feet ($4, $5), Braised Duck Meat ($5, $7, $9) as well as Pig’s Organ Soup.

While looking similar, their style is slightly different from the other Kway Chap stalls, which a braising sauce that was lighter, not as thick, though a tad on the saltier side for me.

They do provide quite a mix of the ingredients, with an assortment of pork belly, small intestines, pig skin, fishcake.

I noted a higher proportion of spongy and soft pig’s skin given – so if you like this, then good for you.

The intestines were my favourite part, cooked in a soy-based marinade with spices till soft and slightly chewy

While I thought that the intestines were cleaned well, there was still a heavier ‘porky’ taste to the meats.

The rice noodles sheets while a tad thicker than others, was smooth and enhanced by the fragrant shallots that you can add more in the soup.
