Adam Rd Noo Cheng Big Prawn Noodle is considered quite a well-known hawker stall in Singapore that specialises in serving Hae Mee.

The stall located in the heart of Adam Road Food Centre, has been in business for more than three decades.

After building up a loyal following of customers over many year, it has finally gained some recognition – recently included in the Michelin Guide Singapore in 2023 with a Bib Gourmand.

If you find the name of this prawn noodle stall at Adam Road Food Centre vaguely familiar, that is because a family member owns another prawn noodle stall.

The Zion Road Big Prawn Noodle which used to be called “Noo Cheng Prawn Noodles” is helmed by his twin brother.

The name was changed few years back for better differentiation between the two stalls. And no, there is no animosity among the brothers.

Oh well, the Zion Road stall seems to have the bigger fame, especially after it was awarded the Michelin Bib Gourmand a couple of years back.

The basic Pork Ribs Noodles at Adam Road in dry or soup options comes at $6.

The rest such as Pork Ribs Prawn Noodles, Sliced Pork Prawn Noodles, and Pork Belly Prawn Noodles are priced at $7 or $8 (price adjusted recently due to inflation).

Served with halved fresh prawns with the shells still kept on, sliced pork, bean sprouts and a choice of noodles (say bee hoon), the portion is considered quite sizable.

The soup is prepared using a mix of prawn shells, pork bones, and other aromatic herbs and spices that is simmered for hours.

I generally prefer the dry version here.

While the broth was mildly flavourful and had hints of sweetness from fresh prawns, I wished it could be more gao-gao and robust.

Add some of the chilli powder for more taste.

Read that there are differing standards to the day and night shifts – nights are better it seems.
