The Michelin Guide Singapore 2023 has announced five new restaurants that have been bestowed with the highly coveted One Michelin Star.
These establishments have caught the attention of Michelin inspectors with their remarkable culinary offerings, earning them a place among Singapore’s top dining destinations.
They include:
– Born by Chef Zor Tan, and the restaurant melds French gastronomy with Chinese cooking
– Poise that reinvents European and Nordic classics
– Seroja that pays tribute to Malaysian culinary traditions
– Sushi Sakuta which creates season-driven omakase menus
– Willow which is the debut restaurant of Singaporean chef Nicolas Tam
The guide also introduces the first-ever Michelin Green Star recognition in Singapore.
This special accolade is awarded to Seroja by Chef Kevin Wong that goes above and beyond to prioritize sustainability. It is a nod to their commitment to being environmentally friendly while serving up delicious food.
When preparing the selection, Michelin inspectors reviewed all types of cuisines and considered only the quality of the food.
All establishments are selected according to the same five criteria used by Michelin inspectors around the world. They are:
1) quality of the ingredients used
2) mastery of cooking techniques and flavors
3) projection of the chef’s personality in his cuisine
4) value for money
5) consistency – both over time and across the entire menu.
Other factors, such as place, décor, service and facilities offered, are supposedly not considered.
