Popular Taiwanese Beef Noodle eatery Niu Dian 牛店, has proudly unveiled a new location in Singapore, right in the heart of Holland Village at 15A Lor Liput.

Its first Singapore outlet is found at VIIO @ Balestier.

The story of Niu Dian began in 2005 in Taipei’s vibrant Ximending district.

Founder Lin Chun Ying sought to create a unique rendition of Beef Noodles by incorporating elements of Western cooking into Chinese cuisine.

This innovative approach bore fruit, as Niu Dian’s Beef Noodles became a hit with customers and went on to earn multiple Michelin Bib Gourmand awards in subsequent years.

Known for its hearty, flavour-packed beef noodles, Niu Dian’s new Holland Village branch will continue to serve these fan favourites.

Combination Specialty Beef Noodle Soup ($19.90)
The Combination Specialty Beef Noodle Soup comes in two variants – original or braised.

My personal recommendation is their braised broth, also known as ”Hong Shao Niu Rou Mian”. The soup is infused with a slight hint of spiciness that adds another layer to the savoury depth.

This aromatic broth has a delicate balance of flavours that swirls tantalisingly on the tongue, the result of brewing a variety of quality beef bone parts, mirepoix, and a curated blend of herbs for 24 hours.

Its depth and complexity are noteworthy, and very comforting to the belly.

Within this glorious broth are several premium beef components, including tender boneless beef rib fingers, chewy golden coins, tripe, and tendon.

I also liked the handmade noodles which had a delightful, chewy texture.

Combination Specialty Beef Pearl Rice Bowl ($19.90)
Niu Dian has expanded its culinary offerings with 牛肉滑蛋饭, a rice bowl topped with pieces of cooked beef and soft, silky scrambled eggs.

Available in spicy or non-spicy variants.

The Combination Bowl includes boneless rib cut, tender tendon, tripe, and the distinct ‘golden coin’ cut, which offers an array of textures in every bite.

The boneless rib cut was tender and juicy, while the golden coin – my other favourite part, was considerably meaty yet soft.

Topped off with a creamy, soft scrambled egg, this option is a marriage of richness and comfort.

Trio Specialty Beef Pearl Rice Bowl ($19.90)
Featuring the same cuts as the Combination, minus the golden coin, this dish allows the succulence of the beef to take center stage.

The trio of cuts – tender rib, silky tendon, and flavourful tripe – are all brought together by the velvety scrambled egg atop a fluffy bed of pearl rice.

Shredded Beef Pearl Rice Bowl ($15.90)
For those who prefer a simpler take on the traditional beef rice bowl, the Shredded Beef Pearl Rice Bowl is a wonderful choice.

Shreds of hearty, melt-in-your-mouth beef are piled generously atop the pearl rice, delivering robust flavours alongside creamy egg.

Stir-Fried Noodles ($13.90 onwards)
Just like their celebrated beef noodles, this 爆炒拌面 features the same handmade noodles with pleasingly chewy texture that Niu Dian is loved for.

Customers can tailor the Stir-Fried Noodle Dish to their preference. Options range from pork (for friends who don’t take beef), beef, or a vegetarian variant.

If you are a fan of heat and the numbing sensation, I would recommend opting for the spicy option.

The spicy version of this stir-fried dish has an uncanny resemblance to mala, offering a pleasant tingling sensation that complements the chewy noodles and robust flavours.

Niu Dian also offers an enticing selection of sides that complements their main dishes.

One of the most popular items is the Cold Century Egg Tofu with Bonito Flakes 木鱼花皮蛋豆腐 ($5.90), a concoction of century eggs and tofu that brings a combination of creamy and savoury flavours in every bite.

What I enjoyed was the Cold King Oyster Mushroom 凉拌杏鲍菇 ($4.90), a cold appetizer featuring marinated king oyster mushrooms, offers a slight-spicy explosion with a satisfying chewy texture.

The Braised Beancurd 热花干 ($3.90) is a warm side dish; while the while the refreshing Cold Cucumber 凉拌酸黄瓜 ($3.90) of pickled cucumbers provides a tangy crunch to balance the overall meal.

Need a drink? The dining experience at Niu Dian is further elevated with their collaboration with homegrown bubble tea brand, Palace Tea.

Bubble tea aficionados can choose from a selection of in-house creations. Signature drinks include the Palace Milk Tea, a creamy classic that never goes out of style.

The Honey Yuzu Green Tea is a fragrant blend with a hint of citrusy zing, a refreshing choice especially for warm days. If you prefer a sweet and minty combination that is refreshing, then go for the Lychee Mint Red Tea.

Other recommendations include the Strawberry Mint Oolong Tea, Lime & Sour Plum Green Tea with Aiyu Jelly, Osmanthus Oolong Jelly Tea, and Passionfruit Green Tea which brings a tropical note to the palate.
