Fans of Taiwanese food will be glad to know that Niu Dian 牛店 has opened a new outlet within Bugis Junction at Level 2 (next to 88 K Town).

Niu Dian 牛店 which originates from Taipei, has two other outlets in Singapore – at Balestier and Holland Village.

Renowned for a modern take of the Taiwanese Beef Noodles and awarded the Michelin Bib Gourmand in Taipei, the secret of their success lies in the meticulous preparation of their dishes.

The noodles, handmade with precision, offers chewiness which contrast brilliantly with their broth.

This consommé-like broth is the product of a full day’s dedication, as it is brewed over 24 hours using an assortment of prime beef bone parts, mirepoix, and a handpicked selection of herbs.

While the Bugis Junction branch pays homage to its roots with the classic and beloved beef noodles, it also showcases a wider culinary range.

On the menu are new rice and noodle bowls, including Braised Pork Belly Pearl Rice Bowl, Braised Pork Belly Noodles, Yakiniku Pork Pearl Rice Bowl, and Stir-Fried Pork Noodles.

Braised Pork Belly Pearl Rice Bowl ($16.90)
Not alike ‘Lu Rou Fan’ with smaller pieces of meat, the rice bowl offers generous chunks of braised pork belly done kong bak style.

What you get are pieces that can be simply sublime, providing a melt-in-the-mouth experience.

Paired with rice, the succulent pork is accompanied by an egg, preserved vegetables, and fresh greens, offering a balanced medley of textures that is both hearty and comforting.

Braised Pork Belly Noodles ($16.90)
Niu Dian’s Taiwanese style pork belly is notably seasoned, resulting in a rich taste profile and gelatinous texture.

Give the noodles a good mix (its the same noodles as the Beef Bowls), and the strands would be coated in the flavourful, slight-sticky braising sauce, provide a chewy counterpoint.

Yakiniku Pork Pearl Rice Bowl ($15.90)
The rice bowl boasts pieces of slight crispy and tender yakiniku-style pork.

Complementing the pork are soft, velvety scrambled eggs which lend a gentle creaminess to the dish.

Stir-Fried Pork Noodles ($17.90)
Their Stir-Fried Pork Noodles boasts a delightful chew inherent in all of Niu Dian’s handmade noodles.

Available in spicy and non-spicy version, I would recommend the spicy variant for a more shiok experience which may remind you of mala noodles.

The spicy sauce present a pleasant tingling sensation that seamlessly intertwines with the robustness of the noodles.

For aficionados of robust-tasting soup, the braised version — the “Hong Shao Niu Rou Mian” offers a symphony of flavours.

The broth is rich and layered, a direct result of its meticulous 24-hour brewing process that utilizes a melange of quality beef bone parts, mirepoix, and specially-selected herbs.

Within this inviting pool of soup are various beef components that charm with every bite — from the softness of boneless beef rib fingers to the delightful chew of golden coins, tripe, and tendon.

Combination Specialty Beef Pearl Rice Bowl ($19.90)
Aptly named 牛肉滑蛋饭, this bowl is topped by pieces of cooked beef – each distinct in their taste and feel, and crowned with a velvety blanket of scrambled eggs.

The boneless rib cut stands out with its tenderness, and the ‘golden coin’ cut intrigues with its meaty softness.

Whether you prefer the kick of the spicy version or the subdued non-spicy one, the bowl promises a heartening meal.
