You may have heard of Black Marble, a steakhouse specialising in grilled meats at Holland Village.

How about White Marble? This is a Mediterranean grill restaurant situated near town at Orchard Rendezvous Hotel.

Both are conceptualised by veteran Chef Otto Weibel, distinctly different in terms of cuisines, but the emphasis in the kitchen remains the same – on using fresh produce presenting a range of classic and reimagined dishes.

Mediterranean cuisine may not be a familiar concept to all, and I think this is a good starting place if you want to savour flavours from Greece, Morocco, Turkey and surrounding regions.

A quick look at the menu and one notices familiar preparations from culturally diverse areas of the Middle East, Northern Africa, and Southern Europe.

Moreover, Chef Otto and team have devised a menu that is apt for sharing. As such, it captures the collective and rustic warmth of Mediterranean food philosophy.

So good to gather a couple of friends to share the food.

Arriving at the restaurant at Tanglin Road (right opposite side entrance of Forum The Shopping Mall), you would find a breezy outdoor terrace space that gives you more of the Mediterranean vibes.

Or head indoors to the 80-seater, 3000-sq-feet dining hall with classy and elegant furnishings complete with a bar that serves up a range of cocktails and wines.

White Marble Seafood Platter ($199, good for 4 pax)
This massive seafood platter includes a medley of the freshest catch of the day that pays homage to the bounty of Mediterranean waters. Best for those who love to have a bit of everything.

The seafood items are simply prepared and seasoned with sea salt flakes, lemon, light herbs and cold-pressed olive oil, then expertly cooked over hot charcoal.

What you can expect include Boston Lobster, Oysters, Squid, Tiger Prawns, Brown Crab, and even a plate of Vongole cooked with garlic, herbs and white wine.

The star of the platter may be the chunky Boston Lobster, but I enjoyed the grilled Squid that was delightfully soft and chewy.

Mezze Plate ($34, good for 2 pax)
The Mezze Plate is archetypal of Eastern Mediterranean cuisine, famous around the world as a flavourful yet filling meal that food lovers can easily share and pair with drinks.

The plate comes stocked with some of Chef Otto’s all-time favourites.

You can expect to find quintessential eats like juicy Chicken Skewers with Chickpea Falafel, Hummus, and Pita Bread.

Additionally, there are the Fattouche and Tabbouleh with Quinoa – these uplifting Levantine salads contain ingredients like fresh onions, tomatoes, radishes, vegetables, mixed greens, herbs and lemon juice.

Completing this tasty collection of small eats is Eggplant Moutabbal. The smoky and creamy dip has a slight perkiness to its taste and goes best with the Skewers or Falafel.

Chicken Leg Bone-in Tagine ($60, good for 2 pax)
Celebrating the pastoral genuineness of Moroccan cuisine, White Marble prepares its delectable chicken leg in a tagine.

A uniquely shaped conical earthen pot, the vibrant-red tagine helps slowly infuse robust flavours into the meat while naturally regulating the moisture of this traditional stew.

To enhance the flavour profile of the chicken further, the chef leaves it marinated in shawarma spice for a day.

Then, the meat, in addition to dates, olives, tomatoes, capers, and preserved lemons, is allowed to cook slowly till its tender and the stew is ready for serving.

Diners who prefer their food to be less spicy will particularly savour the rich stew that goes rather well with another side serving of Pita Bread or Curry Leaf Pilaf Rice.

Skewers
White Marble’s menu features a range of skewers to satisfy both vegetarian and non-vegetarian cravings.

Playfully plated, the selection includes a choice between Seasonal Vegetables ($20), Australian Lamb ($68), a ribeye of Black Angus Beef ($68), and Seafood ($38) included with octopus, butterfish, and prawns.

Eternally comforting, a favourite shish kebab is Chicken & Mushroom ($34). Boasting meaty goodness, it features juicy chicken thighs marinated in shawarma spice.

Each of the skewers comes with three specially prepared sauces.

Whether dipping into the Lemon Garlic Cream, Harissa Aioli, or the Salbitxada (a Spanish sauce with Catalan spring onions), you can expect them to compliment the ingredients.

Dessert – Crema Catalana ($16)
Crema Catalana is a delicious and light delicacy from Catalonia, Spain. If the dish looks familiar, that’s because it resembles a traditional crème brûlée in structure.

At White Marble, the chef enhances the fruity tartness of the dish by layering the dessert with orange zest and freshly squeezed orange juice.

The highlight of Crema Catalana’s “orange variation,” though, is the freeze-dried tangerines and candied orange peels that give an enjoyable crunch to each bite.

Dessert – Medjool Date Cake ($16)
This moist and slightly sticky cake is delicious served for dessert with vanilla gelato and butterscotch.

Adding nuttiness and a contrasting texture to the dish are chopped almonds. The sweet gelato gives balance to the richness and refreshing coolness to the palate.

Corsican’s Fiadone ($16)
Or get the light and rustic Corsican’s Fiadone which is similar to a baked cheesecake included with ricotta cheese and mixed berries compote.

$20 Set Lunch Special
Newly introduced is the $20 Set Lunch Special which offers a 3-course menu.

Start with an appetiser of Horiatiki Salad, Andalusian Gazpacho ‘Chilled’, or the favourite Charcoal Grilled Spanish Octopus (+$10).

For the main course, featured are Hummus with Tabbouleh Salad, Mibrasa Grilled Boneless Chicken Shawarma, Linguine Vongole (+$10), Charcoal Grilled Black Angus Picanha (+$15), or Moroccan Braised Lamb (+$12).

End with sweet treat of vanilla or lemon Gelato with Berries Compote.
