The Sushi Bar which should be a familiar name for Japanese food lovers in Singapore, has just opened its newest outlet at Plaza Singapura.

As a homegrown Japanese restaurant, The Sushi Bar has etched its name as a beloved spot for quality Japanese cuisine, offered at prices that hit the sweet spot of affordability without compromising on quality.

From its humble beginnings in a hidden corner of Far East Plaza, The Sushi Bar has flourished.

Its crowd grew, leading to a flagship restaurant at Ngee Ann City and outlets at Stanley Street, all culminating in the newest addition at Plaza Singapura.

With each iteration, the establishment has become more convenient, more expansive, and more appealing to diners.

Stepping into the Plaza Singapura outlet, the restaurant’s unpretentious atmosphere and simple decor strikes an immediate chord.

The menu is a spread with array of sushi, sashimi, maki, donburi, soba, and other Japanese delicacies.

Among the must-tries is the Kaisen Chirashi Don ($27.90, $31.90), a beautiful assembly of sashimi over sushi rice. With salmon, tuna, yellowtail, swordfish, seared salmon belly, scallop, ikura, and tamago.

I liked the seared salmon belly best which added a rich, smoky contrast; while the ikura (salmon roe) added that salty tang, complementing the subtle sweetness of the tamago (egg omelette).

Underneath these layers lies perfectly seasoned sushi rice, slightly vinegared, holding everything together.

The Wagyu Don ($36.90) is another standout, presenting a luxurious bowl of premium wagyu beef with an onsen egg.

Cooked to a medium or medium-rare (customers can choose), it retains a juicy tenderness that paired well with the velvety onsen egg.

The rice, infused with the flavours from the beef, egg and special sauce, became an essential part of the experience rather than a mere accompaniment.

For those who prefer something crispy and robust, the Chicken Katsu Curry ($17.90) is a safe choice.

The breaded fried crispy chicken cutlet over rice, doused with Japanese curry, offers a comforting, hearty meal.

While it is worth noting that prices have increased slightly over the years, it seems an expected evolution considering the growth and the sustained quality that The Sushi Bar provides.
